Yesterday we ate Jessica. Raised in San Francisco by Chinese immigrant parents, Jessica Lau's upbringing seemed to pave the way for continued duality in her life. How we transformed her into a meal: Getting to know Jess a little and coming to realize what a positive, passionate, fighter, adventurous spirit she is, the quote 'when life throws you lemons, make lemonade' really makes me think of her. Not just because she makes juice for living but because she genuinely seeks the positive in everything. Starting your own business is tough and despite all the curve balls this woman has been thrown, she is seriously rocking it @truestory_juicery Yesterday we literally felt / manifested the struggle and fight and perseverance it takes to get through a day in a start up... Funny how that happened whilst #cooking her! We started off with a strong vision of how the box would be composed, and then as the curve balls / complications hit us through out the production of it, the complete meal at the end of the day turned out quite differently but of course exactly what it should've been in the end. It's almost like the box really took on a mixed / dual identity and paved its own path to a complete meal. 3 Fresh spring rolls - Chinese/Californian fusion filled with chinkiang marinated raw veggies (destined to look like dumplings) With a ginger/tamari/tahini/Birdseye chilli dipping sauce Hong Kong Mango sticky rice - first attempt was to make it look like #nigiri cause Jess loves sushi, with thinly sliced mango on top , but we encrusted it in mixed sesame in the end and served the mango on the side. This was today's Dubai inspired kebab box,🍢🍲🌱 In February I had the honour of being part of the @tellart team who designed the #museumofthefuture experience for the government world summit 2017. It was just the most incredible opportunity going over to Dubai with them and I feel generously enriched by the experience. I admire you guys so much @tellart ! I will share more about it later..... I just need jot down the details of today's meal first! The Kebab looking kofta: Goda masala + cracked coriander and oregano sauteed onions, minced mushroom, parsley and brown lentil bound with psyllium husk, sprinkled with zatar and then baked on a stick!
